Indian Reserve Cornbread Muffins

What You Need:

  • 2 Cups of Yellow Corn Meal
  • 2 Cups of Flour
  • 1/2 Cup of Sugar
  • 6 Teaspoons of Baking Powder
  • 2 Teaspoons of Salt
  • 1/2 Cup of Oil
  • 2 Cups of Milk 
  • 2 Eggs

Process:

 1. Preheat oven to 425 degrees,
 2. In a large bowl combine all the ingredients above with a fork or whisk until thoroughly mixed.

 3. Grease the bottom of a muffin pan with shortening or cooking spray.
 

 4. Soon the cornbread batter into the cups about 3/4 full

 5. Bake for about 15 minutes

*Makes about 18 muffins
